I have been dying to try a red onion & cucumber salad and since I had the ingredients it just made sense to pair it with my grilled chicken. Usually onion & cucumber salads use a white vinegar, but I love balsamic vinegar so I opted for that instead. I think it was a great choice. I let the salad marinate for about fifteen minutes, but it would probably be better if marinated overnight.
I marinated the chicken in an orange ginger soy sauce, grilled it, and set it aside to cool for a minute.
Ingredients:
- 2 Chicken Breast
- ½ Cup Orange juice
- 1 Tbsp. Ginger
- ½ Cup Soy sauce (I use a low sodium soy sauce)
- ¼ Cup Olive Oil
- 2 cloves garlic
- Salt
- Pepper
Cucumber & Onion Salad
- 1 English Cucumber
- 1 Red Onion
- 3 Tbsp. Balsamic Vinegar
- 1 Tbsp. Sugar
- 1 Tbsp. Parsley
- 2 Tbsp. Water
- Dash Salt
- Dash Pepper
Once the chicken was ready I plated it and tossed the red onion & cucumber salad over the chicken for a delicious and really healthy summer-inspired meal.

ReplyDeletei'm always terrified to make salads because of the dressings but the other day i tried this "warm vegetable salad" it was really good. the vingrette i used olive oil, parsley, oregano, red wine vinegar (the recipe called for white but i had red on hand already) and salt & pepper. it came out really good. i let it sit for like about an hour before trying so it really absorbed the flavors. i'll post up the recipe later. also i grilled the veggies w/ an indoor grill and then i put it in the oven so it was really good.
what kind of cucumber is that? it has ridges and i don't think i seen cucumbers like that unless you shaved it.

The cucumber is an english cucumber, or "seedless", and it comes wrapped in plastic at the grocery store to keep the freshness. Those are my favorite kind.
ReplyDeleteMade this last week and let the chicken and salad marinate overnight - was ABSOLUTELY DELICOUS. Even left out the sugar from the salad (I had run out)and substituted grapefruit juice for orange juice (all I had) and was just as tasty. Love this blog!
